Wonder Pickles

Pickles keep in the refrigerator for up to 1 month.

Ingredients

3 cucumbers, thinly sliced

1 onion, thinly sliced

1 1/2 cups white vinegar

1 cup sugar

1/2 tsp salt

1/2 tsp mustard seeds

1/2 tsp celery seeds

1/2 tsp ground turmeric

1/4 tsp mustard powder

Preparation

  1. Layer half the cucumber slices in a large glass bowl and top with half the onion. Repeat with the remaining cucumber and onion.

  2. Combine the vinegar, sugar, salt, mustard seeds, celery seeds, turmeric, and mustard powder in a saucepan. Stir well and bring to a boil. Cook for 1 minute, then pour over the cucumber and onion mixture. Let cool completely.

  3. Cover and refrigerate for 4 days before serving. Pickles keep in the refrigerator for up to 1 month.
