Slow Cooker Mac and Cheese

Perfect as a side to any southern comfort food, but there’s no shame in eating this as a main course.

Ingredients

1 lb elbow macaroni

1/2 cup (1 stick) unsalted butter, melted

4 cups sharp cheddar, freshly shredded

4 oz cream cheese, cut into cubes

1/2 cup freshly grated Parmesan

2 (12 oz) cans evaporated milk

2 cups whole milk

1/2 tsp garlic powder

1/8 tsp paprika

Kosher salt and freshly ground black pepper, to taste

Fresh chives, finely chopped, for serving

Preparation

  1. Combine the macaroni, butter, cheddar, cream cheese, Parmesan, evaporated milk, whole milk, garlic powder, and paprika in the slow cooker. Season with salt and pepper and stir to combine.

  2. Cook on high until the pasta is tender and the sauce has thickened, 2–3 hours, checking after 2 hours and then every 20 minutes.

  3. Scatter with fresh chives and serve immediately.
